There has been some interest from members in better understanding the grading of truffles for sale, to monitor output quality. The truffle grading standards adopted by the UN, have been translated from the French and are probably the closest thing we have to an international standard.
The NZ Association have adapted the grading to define what is thought to be the essential attributes - quality is in the nose and to a lesser extent, size. For those of you interested to check the original UN grading you will note that the classifications have been changed somewhat. The use of the terms grade 1, grade 2 and extra (what does "extra" mean in English) are perhaps somewhat difficult as they convey nothing as to quality of the truffle. We perhaps should not lose sight of the differences, particularly if we are intending to sell to the French market.
We welcome this initiative of the NZ Association would value the opportunity to further work with them on the development of a uniform standard for Australia and NZ.
